about a month ago, L and i got some beets from our CSA. it being roughly 110* inside L's apartment- we* did the obvious and decided to pickle them! we found an easy recipe, followed it and stored them in the closet until yesterday. they were added to a salad and were AWESOME. best pickled beets i've ever had, can't wait to eat the second jar. (the empty jar of beet juice will get hardboiled eggs added in the next day or so)
*and by we i mean L did 99% of the work. that kind of heat makes me too cranky to be useful. i'm ok with admitting that.
